When it's cold outside that means it's time to start cooking some soups! I like to cook out of my garden and use fresh ingredients whenever possible. Here is one of my favorite recipes to help keep you warm when it's cold outside.
4 TBS Olive Oil
3/4 C Chopped Onion
1/4 C Chopped Celery
1/2 C Chopped Carrots
1 Can Cannellini Beans (Drain and Rinse)
1 C Shredded Cabbage
1 C Cubbed Potatoes
1 Quart Chicken Broth or Chicken Bone Broth
2 Cloves Minced Garlic
2 TBS Cut Up Parsley
4 Cut Up Tomatoes (I like to take the seeds out)
Add Ons if you want but don't have to:
1/2 C of Elbow Macaroni
Grated Parmesan Cheese
1. Add Olive Oil to pot and over medium heat sauté Onion, Celery, and Carrots for a few minutes.
2. Add Chopped Tomatoes, garlic, parsley, salt and pepper to taste and cook for 30 minutes. (If you want a faster soup, use 1 can of diced tomatoes)
3. Add Potatoes and Chicken Broth. Let cook for 30 minutes.
4. Add Beans and Cabbage. Cook for 30 minutes.
Optional... 5. Add Elbow Macaroni to the soup and cook until tender.
Optional... 6. Top with a little dash of Parma Cheese.
